Skip DMC2 if you want, I don't think it adds much to the lore and story and it is known to be a terrible game. As you play the games just keep in mind the chronological order which is 3 -> 1 -> 4 -> 5. Lastly you can play the reboot DMC: Devil May Cry.

A good entry point to the series would be DMC3, because in essence it captures everything that’s good about DMC, the combat, the music, and Vergil. After than I would play DMC1, DMC4, and DMC5, in that order. 1
The reboot had that unnecessary gimmick with the angelic and demonic weapons only working on certain enemies which this one doesn't have. I don't remember that much from the reboot but I think that was the biggest difference gameplay wise. Ultimately I think DMC 5 is a much better game but if you're looking for a continuation of the reboot
The System switches weapons when it feels like it, because that is what it was designed to do. If you want to play Dante the way he has to be played, turn off auto mode. He's more fun like that anyways, mostly because even the game itself is probably a bit overwhelmed with the possibilities his arsenal offers. #1.
